Hello, this looks amazing and I'm excited to make it, but i am confused by this part "Working in 3 batches, gently fold cream into pie filling until just incorporated" So the whipped topping is mixed into the filling? You don't pour and set the coconut pie filling then top with whipped topping? Thanks anyone and everyone for clarification! I used sweetened coconut in place of unsweetened.
The best coconut cream pie I've ever made or tasted. The pie didn't set and the cream meant it stayed flat. Use canned coconut milk (such as Thai Kitchen"). Do NOT use "coconut milk beverage" which is sold near the milk substitutes (ie soy milk, almond milk, etc) or the pie will not set. Outstanding recipe if you use the proper ingredients and follow the instructions.

I completely mis-read the part about adding 1/2 the coconut milk mixture into the egg mixture, but then adding ALL back in the pot, including the other leftover 1/2 of coconut milk mixture! It still incorporated back in once I rewarmed the custard. This turned into a 3 day adventure for me. It is much easier to make and totally delicious!
